My faux hollandaise had some lemon in it.
On Sunday I cooked a hot breakfast for Ethan and here's a shot of the finished product. Not traditional eggs benedict, because I KNOW THAT YOU KNOW THAT I CAN'T make hollandaise. So, here it is: English muffin on the bottom, corned beef hash on top, then poached eggs (that was trickier than you think) topped with a squeeze of lemon in some melted butter and dripped on top (in case that corned beef hash wasn't going to clog my arteries as it was). Enjoy!
